Chicken en Roja e Verde

Tonight we had an awesome dish. We love enchiladas; however, sometimes we just want the flavor without all the hassle.  This dinner is like having chicken enchiladas without the tortillas. Here is the recipe.

Ingredients:

2 Boneless Skinless Chicken Breasts
1 can green enchilada sauce
1 can red enchilada sauce
1 cup total sliced green, yellow, and red peppers
green onion to taste
cilantro - to taste
two slices of extra sharp cheddar

Place the chicken in a deep pan.  Combine the green and red enchilada sauce and pour over the chicken.  Cook at medium high  heat for 20 minutes.  Add the peppers and cilantro.  Cook an additional 5 minutes. Top the chicken breasts with sliced sharp cheddar and green onion. Let cool for 5 minutes.  The cheese will melt making a nice creamy sauce.

For a heartier sauce, include black beans.
