OK, so this probably sounds like an odd recipe, but it tastes SO good. Basically it is a play on a Thai Tom Kha soup. We didn't have any lemon grass but we had some coconut milk sitting around just begging to be used. So this is the recipe.
2 Boneless skinless Chicken Breasts
1 Can Light Coconut Milk
1 Can Pineapple Chunks
1 Can Black Beans
1 Cup mushrooms
Chopped green onion to taste.
Chopped cilantro to taste
1 Table spoon Olive oil
Cut up chicken and cook to done. In same pan, add the ingredients and simmer. Cook for 15 to 20 minutes.
