Sweet Potakey Curry

OK, so this was definitely a night before grocery shopping recipe.  But it really tastes good.  When you look at the ingredients you are going to say "huh?"  If you like Indian or Thai food, you will probably really like this like we do.

Ingredients:

1 lb. ground turkey (like I said, this is a bit different)
1 large or 2 medium sweet potatoes
1 box of frozen spinach
2 cups Trader Joe's yellow curry (or the Thai curry if you prefer)


Defrost the spinach. Chop the sweet potatoes into bite size chunk, place in boiling water and let cook for 10 minutes.  Brown the ground turkey.  Combine the spinach with the ground turkey, add the curry, let simmer.  Drain and add the sweet potatoes. Continue to simmer for a additional 5 minutes, stirring occasionally.

The flavor is pretty amazing, you really need to try this.
