Awesome Chicken Cilantro Spring Rolls

We have been looking for won ton wrappers for some time now.  You would think something you see in  different recipes would be readily available.  Well, Seafood Market has moved to town, and we can now find everything we need.

So we got our won ton wrappers, spring roll wrappers, and lumpia wrappers.  They were in the frozen food section.  Make sure you check the nutritional value.  The wrappers we got were 27 calories a piece with 0 fat.  There were others though that were as high as 65 calories a piece and high in fat.

The spring roll and won ton wrappers come in a packet that looks like American cheese.

We also got our rice paper for our steamed spring rolls.

This is the recipe we used the other night.  They are definitely a light spring roll:

Ingredients for the filler:

2 boneless skinless chicken breasts
1 bunch cilantro
1 onion
1 tablespoon lime juice
1 tablespoon lemon juice
garlic salt to taste

To make the filler, dice the chicken into cubes. Dice the cilantro and onion. In a pan, cook all of the ingredients together until done.

Then place the ingredients in a food processor.  You will want to grind the ingredients down, almost to the consistency of hamburger.

Ingredients for the Spring Rolls:

Spring roll wrappers
1/4 cup Extra Virgin Olive Oil

We found that you will want to fill your wrappers first before heating the oil.  This process goes rather fast.  Place a tablespoon of filler on a wrapper.  Then wrap.  Place on a plate.   You should have about 20 to 25 spring rolls.

Once you are done, heat the olive oil on medium high heat.  Olive oil has a low burn temperature, so if it begins to smoke, it is off course too high.  Not high enough and the spring roll will absorb the oil.  Place the spring rolls in the pan, turning about 1 minute.  The wrapper should be golden brown.  Place on paper towel to remove excess oil.

Plate and serve.  We normally have a chillie sauce we get at Trader Joe's to dip in.
