Chocolate Chip Cranberry Oatmeal Cookies


So you can tell in the last couple of recipes we are in a bit of a baking mood.  Well, we also want to do it smart.  So this recipe is low in fat (the chocolate chips, 1 tablespoon oil, and 1 egg) and is pretty tasty.

We took these cookies also to the Two Cities Marathon in Fresno for great carb-loading.



Chocolate Chip Cranberry Oatmeal Cookies Courtesy of Gastro Experiments

1/4 cup sugar
1/4 cup brown sugar
2 tsp vanilla
1 egg
1 tbsp canola oil
1/2 cup unsweetened applesauce
1/2 tsp salt
1 tsp baking soda
1 cup flour
3 cups uncooked oatmeal
1 cup semi-sweet chocolate chips
1/2 cup dried cranberries

Preheat oven to 350 F.

In a large bowl, mix sugar, brown sugar, vanilla, oil, and egg into apple sauce.

In a smaller bowl, mix salt and baking soda into flour.

Combine the flour and apple sauce mixture and mix well. Fold in oatmeal, then the chocolate chips and cranberries. Drop by rounded tablespoon onto un-greased cookie sheet.

Bake 10 minutes. Let stand for 2 minutes before transferring cookies to plate cool.

Makes ~3 dozen cookies
