Our Favorite Pork Tacos

One of our favorites is a spin on the classic taco. The meat is cooked in the crock pot, so it does take a bit of time, but it is definitely worth it.


Pork filling

2 country style boneless pork ribs
2 cans green enchilada sauce
1 can green chillies
2 jalapeno peppers (optional)
3 sareno peppers (optional)
cilantro to taste
3 cloves garlic

In the crock pot place the pork ribs, enchilada sauce, and green chillies in the pot. Cut up the peppers and cilantro. Add to pot. Add crushed garlic to pot. Cover and cook for 4 hours.

After four hours, take out meat and shred. Remove any of the fat. Return meat to sauce.

Taco Ingredients

Corn Tortillas (as many as you will serve)
Olive oil

Tomato
Shredded Cheese
Chopped Onion
Pineapple (optional)

Fry the corn tortillas in the olive oil high -medium heat (level 6). Fry one side for 10 seconds, then flip. Fry another 10 seconds then fold. Fry until golden brown on each side. Place on paper towel to remove excess oil.

For the perfect taco, place pork, cheese, onion, tomato, then pineapple. Enjoy!!.
