Tasty Ginger Chicken

A couple of years back we decided we needed to get healthy. Healthy didn't mean a short term weight-loss goals or exercising so we could eat whatever we wanted. It meant making healthy choices both in food and activities.

So we have shifted from eating red meat to boneless skinless chicken, turkey, and pork. The problem we face that if you are not adaptable, it is easy to get board. Thus a further reason to experiment.

This another chicken recipe; however, with a different spin. To keep costs down, we typically get our chicken frozen at Costco or Safeway (when it is below $1.89 lb). You have less risk of food poisoning from frozen chicken, surprisingly, since the way the chicken is frozen kills much of the bacteria.

2 to 3 boneless skinless chicken breasts
2 cups Baby Bella mushrooms (Costco again)
1 cup snap peas

2 to 3 chopped garlic cloves
1 Tbsp diced fresh ginger

1/4 white wine
1 Tbsp soy sauce
1 Tbsp lime juice
1 Tbsp olive oil

Cut the chicken into cubes. Heat the olive oil at medium high heat, then add the garlic and fresh ginger. Then add the chicken. Cook thoroughly. Chicken should be slight browned.

Add the mushrooms and snap peas. Stir in the soy sauce, lime juice, and white wine. Continue stirring until all the liquid has either cooked into the food or evaporated.

Prep time 10 minutes, Cook time:10 minutes.
