Hodgepodge Stew

So tonight Beth made a very tasty stew. It is very hearty and has a lot of flavors going on. It is pretty simple to make; however, it is oh so good!

1lb. ground turkey
1 sweet potato or yam
2 zucchini
1 crookneck squash
1 Mexican or English squash (at Safeway it is called a Mexican squash, at Draegers it is called an English squash...go figure)
1 onion
2 cups broccoli
1 cup chopped orange, red, and yellow peppers

1 Tbsp. chopped ginger
3 garlic cloves, chopped

2 canned diced tomatoes
2 cans beef broth
1 can black beans, drained

Salt and Pepper to taste

In a pan, brown the ground turkey with the onion, ginger, and diced garlic. Add 1/2 can beef broth. Simmer

Chop the vegetables. In a large pan, combine all of the vegetables, black beans, canned tomatoes, sweet potato, and remaining beef broth. Make sure you chop the sweet potato into small chunks. Bring to boil, then let simmer. Add the ground turkey. Let simmer for 1 hour or until the sweet potato is tender.

I know the ginger seems like an odd ingredient to add to a stew, but it brings out the richness of the squash and the broth.



A shopping note, we normally get our yellow, red, and orange peppers at Costco. They come in a bag and are of the small variety.

  1. I would call this "The Night Before Payday, Everybody in the Hottub" stew. Literally, every veg we had left in the house got put into the pot. I have a feeling it will taste even better tomorrow!
